It’s the kind of loaf that looks like you picked it up from a boutique bakery. But you didn’t. You made it in your kitchen.

And when you cut that first slice? The swirl does the talking.

Why You’ll Love This Cake

How to make a strawberry lemonade poundcake

It’s rich without being heavy.
It’s sweet but balanced with real lemon.
It looks stunning on a cake stand.
And it holds up beautifully for parties, showers, or summer get-togethers.

This is not a basic lemon bread with chopped strawberries tossed in. We’re doing it right.

Ingredients

For the Strawberry Reduction

1 cup fresh strawberries, diced
2 tablespoons sugar
1 teaspoon lemon juice

For the Pound Cake

1 cup unsalted butter, room temperature
1 ¾ cups granulated sugar
4 large eggs
2 ½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
½ cup sour cream
Zest of 2 lemons
¼ cup fresh lemon juice

Lemonade Syrup Soak

2 tablespoons fresh lemon juice
2 tablespoons sugar

Strawberry Lemon Glaze

1 cup powdered sugar
1 to 2 tablespoons strawberry puree
1 teaspoon lemon juice

Step 1: Make the Strawberry Reduction

In a small saucepan, combine diced strawberries, sugar, and lemon juice.
Simmer over medium heat, stirring occasionally, until thick and jam-like.

This takes about 8 to 10 minutes.

Let it cool completely.
This step keeps your swirl vibrant and prevents soggy pockets inside the cake.

Step 2: Make the Pound Cake Batter

Preheat oven to 325 degrees. Line a loaf pan with parchment paper.

In a large bowl, cream butter and sugar for 3 to 4 minutes until light and fluffy. This step is key for that tight, bakery-style crumb.

Add eggs one at a time, mixing well after each.

In a separate bowl, whisk flour, salt, and baking powder.

Mix lemon zest, lemon juice, and sour cream together.

Alternate adding dry ingredients and sour cream mixture into the batter. Mix until just combined. Do not overmix.

Step 3: Create the Swirl

Pour half the batter into the prepared loaf pan.

Spoon cooled strawberry reduction across the top in lines.

Add remaining batter on top.

Using a knife, gently swirl once or twice. Do not overwork it. The goal is visible pink ribbons, not blended batter.

Step 4: Bake

Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in pan for 10 to 15 minutes before removing.

Step 5: Lemonade Syrup Soak (Do Not Skip This)

While the cake is still slightly warm, mix lemon juice and sugar together.

Brush over the top of the loaf.

This adds that lemonade brightness and keeps everything incredibly moist.

Let cake cool completely before glazing.

Step 6: The Pretty Pink Glaze

Blend powdered sugar, strawberry puree, and lemon juice until smooth.

It should be a soft blush pink. If too thick, add a tiny splash of lemon juice. If too thin, add a little more powdered sugar.

Pour over the cooled cake and let it drip naturally down the sides.

For extra presentation points, garnish with:
• Thin lemon slices
• Halved strawberries
• Freeze-dried strawberry dust
• Fresh mint leaves
